I am so thankful for my family! I have been blessed with a wonderful husband and 4 amazing children. This year we are staying HOME to celebrate THANKSGIVING. I am excited to spend time with each other, reflect on all that we are thankful for-and of course enjoy some yummy food. Here is a recipe that is a hit at our home:
Pumpkin Chocolate Chip Muffins
Preheat oven to 400 F. In a large mixing bowl, beat 4 eggs, 2 cups sugar, 1 16 oz can of pumpkin, and 1 1/2 cups vegetable oil. In a separate bowl, combine 3 cups flour, 2 teaspoons baking soda, 2 teaspoons baking powder, 1 teaspoon cinnamon and 1 teaspoon salt. Add dry ingredients to wet ingredients. Fold in 2 cups chocolate chips. Fill greased or paper-lined muffin cups 3/4 full. Bake 16-20 minutes or until done.
